Cooking spray
3/4 cup cooking oil
1-1/2 cups sugar
4 eggs
2 cups finely shredded carrots (about 3 oz.)
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped walnuts (about 4 oz.)
red food coloring
yellow food coloring
1/4 cup semi-sweet REAL chocolate chips
Preheat oven to 350°F. Evenly coat a 15-1/2 X 10-1/2 X 1-inch baking pan with cooking spray. Line with parchment paper and spray again. In a large mixing bowl, stir together oil, sugar, eggs, carrots, and vanilla. Beat on medium speed until well mixed, about 2 minutes. In a medium bowl, stir together flour, cinnamon, baking soda, baking powder, salt, and walnuts until thoroughly mixed. Beat into egg mixture until well blended. Spread evenly in prepared pan. Bake for 25 to 30 minutes, or until toothpick inserted in center comes out clean. Cook on rack. Remove from pan; remove paper.
Meanwhile, spoon one can of frosting into a small bowl. Stir in 1 to 2 drops of red food coloring and 2 to 4 drops of yellow to make orange. Mix until well blended. Spread evenly over cooled bars. Score markings to make 16 bars. Spoon 1/3 cup frosting from second can into a small bowl; reserve for outline frosting. To make a ghost, use a scant tablespoon of frosting from second can for each bar. Spread with a spatula to create ghost shape. To outline ghosts, put chips into a microwaveable dish or measuring cup. Heat in microwave at HIGH power for 2 minutes or until chips are glossy. Stir to melt completely. Stir chocolate into reserved frosting and mix well. Cover and refrigerate any remaining frosting for another use. Put chocolate mixture into a decorating bag fitted with a star tip. Pipe in the eyes and an outline on each ghost. Cut bars to serve.
Hints:
If you do not have a decorating bag, spoon chocolate mixture into a resealable plastic sandwich
bag. Squeeze mixture into one corner of bag. Snip off tiny bit of bag corner with scissors to
create a decorating tip. Chocolate chips must be REAL chocolate chips or they will not melt
properly.
Note:
All microwave-cooking times are based on a full power output of 600 to 700 watts. For a lower
wattage oven (500 to 600 watts), allow more time.
