1 package (5-8 oz.) mixed leafy greens, (4 cups)
4 hard-cooked eggs, chopped
1/2 cup chopped, grilled chicken
1/2 cup low-moisture, part skim mozzarella cheese, cubed in 1/4-inch pieces
1 cup chopped tomato
1/2 cup chopped sweet red or green pepper, mushroom and/or avocado
2 tablespoons chopped green onions
2 tablespoons reduced fat bacon bits
reduced fat salad dressing of your choice
In a large bowl, toss together all ingredients and top with favorite low-fat dressing. Salad may also be served in individual bowls with dressing served on the side.
