1/2 cup butter or margarine, melted
1 cup sugar
1/3 cup cocoa
1/4 cup flour
4 eggs, beaten
2 teaspoons mint extract
1/4 teaspoon salt
After dinner mints*
In a large bowl mix together butter, sugar, cocoa and flour. Add beaten eggs, flavoring and salt. Mix completely. Pour into 8-inch square pan, lined with foil and sprayed with vegetable spray. Bake in 350°F oven for 25 minutes.
Remove from oven and place after dinner candy mints on top of brownies. Return to oven for 5 minutes. Remove pan from oven and spread melted mints on top of brownies as frosting. Let cool completely, remove from pan and cut into squares.
* Andes chocolate mints work well. Start with approximately 12 mints and add more if desired.
