Potato-Egg Bake
(Serves 12)

12 slices bacon, either turkey or pork
2 pounds frozen shredded hash brown potatoes
2 cups shredded cheddar cheese
12 eggs
2 teaspoons salt
Pepper to taste
Cooking Spray

Heat oven to 350°F. In a large pan, fry the turkey bacon until crisp, or bake in the microwave oven until crisp. Spray a 10 X 12 X 2 inch baking pan with cooking spray, set aside.

In a separate bowl, crumble bacon and mix with cheese. Spread hash brown potatoes evenly over bottom of prepared pan. Spread bacon-cheese mixture over potatoes.

Beat eggs, salt, and pepper to taste. Pour eggs over ingredients in pan, moving potatoes slightly to allow eggs to disperse throughout pan. Bake 55-60 minutes until firm and golden. Cut into 3 X 4 inch servings.
