Hash Brown Quiche
(6 Servings)

Cooking Spray
4 eggs, divided
3/4 teaspoon celery salt
2 cups frozen shredded hash brown potatoes, thawed (about 12 oz.)
1/4 cup diced onions
1/2 teaspoon garlic powder
salt and pepper to taste
2 cups frozen vegetable blend (about 12 oz.)
1/2 cup diced cooked chicken OR ham OR cooked turkey
1 cup skim milk
2 tablespoons slivered almonds (optional)

Evenly coat a 9-inch pie plate with cooking spray. Set aside. In a medium bowl, beat together 1 egg and celery salt. Stir in potatoes until well combined. To form crust, press potato mixture onto bottom and up the sides of the greased pie plate. Bake in preheated 375°F oven for five minutes. Remove from oven. Sprinkle with vegetables and chicken.

Beat together milk, remaining eggs, onions, and seasonings until well blended. Pour over vegetables and meat. Sprinkle with almonds. Bake in preheated 375°F oven until a knife inserted near the center, comes out clean, about 45 minutes. Let stand 5 minutes before serving.
