White Turkey Chili
(Makes 12 -1 Cup Servings)


2 tablespoons olive oil
1 cup chopped onion
1 cup chopped celery
4 cups chopped, cooked turkey
3 cans (15.5 oz) Great Northern Beans, drained
2 cans (11 oz) White Shoepeg Corn, undrained
1 can (4 oz) chopped green chilies
4 cups turkey or chicken broth (low sodium)
1 teaspoon ground cumin

Heat oil in a skillet over medium heat. Add onion and celery, cook and stir 2-3 minutes. Place the rest of the ingredients in a large saucepan (at least 4-qt.) Stir well. Cover and cook about 15 minutes over medium heat stirring occasionally until thoroughly heated.

Alternate Cooking Method:
Place all ingredients in a slow cooker and cook on low for approximately 6-8 hours.

Sprinkle mozzarella cheese on top if desired.

259 calories; 29 g carbohydrates; 21 g protein; 263 mg sodium; 6 g fat; 2 g saturated fat; 37 mg cholesterol.
